I want this affiliate to earn commission for all of a specific product's sales

You can assign that affiliate to the specific product at Affiliates > Royalty. All upcoming orders of the added product will be tracked for that affiliate, without customers having to place those orders via the affiliate's link or use the affiliate's coupon.
